Get everyone in
Invite every user under Settings → Users & Roles and assign roles that match what they actually do. 1.0 logins do not carry over. Check that more than one person can reach billing, payments and user management. A single administrator is a single point of failure, and migrations have a habit of coinciding with holidays.Train the people who use it daily
Train the people who take orders, hand items over, and take them back. That is a different group from the people who configured the system, and they need different things. Give each location a named superuser who is on shift when you switch. On the day, questions go to a person in the room, not to a support queue. Put quick-reference material at the counter.
